Week 6 CSA

Thank you to Will’s parents who visited this week and helped us plant, weed, and harvest for CSA. We love you Bob and Sue and appreciate all the help and can’t wait to spend some down time with you this winter in Portland!

Another special thanks goes out to Ian, Ruby, and Brad for helping lay mulch, drip tape, and transplants!

We really appreciate it!

We made the Beet Root and Greens quesadillas (week 5 recipe) –they were delicious with fresh strawberries on the deck! We brushed the tortillas with a little oil, piled on the greens mixture and topped with shredded cheese, folded in half and grilled both sides. I had already grilled our beets for dinner the night before so we just substituted more chard stems for the beet root in the quesadillas. We also tried the Pasta with Greens and Feta–a new favorite at our house! Thanks for the great recipes for us to try in our first CSA year!
